Healthy, No-Cook Chocolate Avocado Pudding

If you’re like me, you’re probably already obsessed with avocados. I use them for Avocado toast (duh) as well as salad dressings, sandwiches and wraps, and of course, in salads. But while we think of avocados as a savory ingredient, many countries around the world use the buttery fruit in sweet milkshakes, desserts and smoothies. It has a neutral flavor and natural creaminess that makes it the perfect base for one of my favorite desserts. Chocolate Avocado Pudding is good for you, easy to prepare, AND kid-friendly.

This Chocolate Avocado Pudding is easily adaptable to your dietary needs. You can use regular or non-dairy milk to puree, maple syrup or honey to sweeten, and you can even add mint flavoring if your kiddos are chocolate mint fans. But the best part is that it doesn’t require a stove and can be ready in less than five minutes. All you need is something to blend it up. I like to use a food processor for a big batch and an immersion blender for small batches. Regular blenders also work, but you might have to stop a couple of times while blending to scrape down the sides.

I’d say the hardest part of this recipe is getting perfectly ripe avocados. My advice for buying ripe avocados is “Don’t.” If you buy them when they are already ripe, they are likely to be bruised or overripe inside. The best method is to buy your avocados while still green and firm. Let them sit out on your countertop until they are just ripened. They will be dark green and give slightly to pressure. Once they reach this point, you can use them right away or store in your fridge. After they go in the fridge, they will stop changing and remain perfectly ripe for a week or two. Once you’re stocked up, you can make Chocolate Avocado Pudding quickly and easily at home.
